Chicken Salad

Ingredients

1 cup shredded chicken

1/4 cup English cucumber, diced

1/4 cup chopped celery, diced

1/4 cup grapes, halved

1/4 cup plain non-fat greek yogurt (see note for substitute)

1/2 tbsp dijon mustard

2 tsp lemon juice, freshly squeezed

1 tbsp chopped pecans (or walnuts) sea salt and black pepper to taste

Directions

In a bowl, combine: sliced cucumber, sliced avocado, thinly sliced red onion, chopped bell pepper, drained tuna, and cilantro.

Drizzle salad ingredients with lemon juice, olive oil, salt and black pepper (adjust to taste).

Toss to combine and serve.

notes

Can be a great topping for a slice of whole wheat toast!
