Creamed Spinach

Ingredients

4 cups spinach

1 tsp butter, unsalted

2 tbsp heavy cream

1 tbsp grated parmesan cheese

Dash of salt

Directions

Wash and dry the spinach.

Stack the leaves (10-20 at a time) to easily slice the leaves into strips.

Sauté the spinach in butter until softened, about 1-2 minutes.

Transfer the spinach into a strainer (place over a bowl to reserve the liquid to drink or add to a smoothie). Press the spinach with a wooden spoon until the majority of the liquid is drained.

Transfer the spinach back into a small pan, turn to medium heat, add the heavy cream and salt, and stir until all liquid is absorbed.

Once the majority of the cream is absorbed add the cheese and stir until melted.

Let cool, serve, and enjoy!

Notes

Spinach never ceases to amaze me how much shrinks into nothing. Eat the full recipe to be full or have it as a side dish.

I love how easy/simple this recipe is.
