Crispy Chickpeas

Ingredients

1 can chickpeas, drained and rinsed

1 tbsp olive oil, for drizzling

Sea salt to taste

Your spice combination of choice

Directions

Preheat the oven to 425°F and line a large baking sheet with parchment paper.

Spread the chickpeas on a towel and pat them dry. Remove any loose skins.

Transfer the dried chickpeas to the baking sheet and toss them with a drizzle of olive oil and generous pinches of salt.

Roast the chickpeas for 20 to 30 minutes, or until golden brown and crisp. Ovens can vary, cook until crispy!

Remove from the oven, toss with pinches of your favorite spices, and return to the oven for 5-10 more minutes.

Store in a loosely-covered container at room temperature to maintain crisp. They are best consumed within two days.

Notes

Spice combinations:

2:1 Paprika & Cumin

2:1 Paprika & Curry Powder

2:1 Turmeric & Ginger

3:1 Cinnamon & Sugar

1 Lime & 2 tsp Black Pepper

(2:1 ratio means 2x as much of the first spice as the second)
