Southwestern Quinoa Salad

Ingredients

Salad:

2.5 cups cooked quinoa

1 cup chopped red bell peppers

1 cup yellow corn (drained)

1 cup black beans (drained)

1/2 cup chopped spring onion

1/4 cup chopped cilantro

1 avocado, diced

Dressing:

1 clove garlic, minced

2 tbsp olive oil

Juice from 1 lime

1 tbsp honey

1 tsp chilli powder

1/4 tsp salt

1/4 tsp pepper

Directions

Make salad:

In a large bowl, toss together all salad ingredients

Make dressing:

In a small bowl, whisk together lime juice, honey, salt, pepper, chili powder, and garlic.

Slowly drizzle in olive oil, whisking constantly until emulsified.

Before serving, drizzle dressing over salad and toss to combine.

Notes

Serves 2-4 people depending on nutritional needs.

Great one to meal prep and eat cold when there’s limited time for lunch
