Spinach and Cheese Waffles
Ingredients
4 cups of loosely packed baby spinach (roughly chopped)
6 slices of deli ham, sliced
1/2 cup of shredded cheddar cheese
1/4 cup of gouda cheese
1/4 cup of provolone cheese
1 1/2 cups all-purpose flour
1 tsp garlic powder
1 tsp salt
2 tsp baking powder
1 1/4 cup milk
4 tbsp melted butter
Oil spray
Directions
Preheat the waffle iron to medium to medium-high heat
In a large bowl add the spinach, cheeses, deli ham, flour, garlic powder, baking powder, and salt. Mix until well distributed.
Add the milk and melted butter, then mix until well combined and very sticky.
Spray the waffle iron with oil, add the waffle mix to the iron and make waffles!
With a mini waffle iron the recipe makes 6-8 waffles. Feeds 3-4 people.

Healthy, filling and easy!
Note, these are already high in fat. I would serve with berries on the side and an egg white on top.
