Kale and Sweet Potato Hash

Ingredients

One large sweet potato, cubed

4 eggs

4 cups chopped kale

1/4 cup shredded Parmesan cheese

1/2 small red onion, diced

1 spring onion, chopped

1.5 tbsp olive oil

2 tsp minced garlic

1/2 tsp salt and pepper

1/4 tsp red pepper flakes

Directions

Heat 1 tbsp of oil in a large skillet over medium heat. Add sweet potatoes, salt, and pepper. Toss and spread into a single layer and cook until crisp, about 6 minutes. Flip potatoes and continue to cook until crispy all around, for another 6 minutes. Remove to a small plate and set aside.

Add 1 tbsp oil and red onion to the pan. Cook for 2 minutes, then add kale, minced garlic, and more salt. Cook until kale has wilted, then add sweet potatoes and toss.

Make 4 even spaces to create wells in the hash. Crack an egg into each. Cover the pan until cooked through, about 6 minutes. Top with parmesan cheese and red pepper flakes. Garnish with sliced spring onion. Hash serves 2.
