Caprese Breakfast Casserole

INGREDIENTS

12 eggs

1/2 cup milk of choice

2 tsp minced garlic

1 shallot, chopped

14 sliced cherry tomatoes

1 cup baby spinach

1 cup chopped basil

1 cup part-skim shredded mozzarella

1 tbsp olive oil

Salt and pepper

Directions

Preheat oven to 350 degrees.

Spread olive oil over the bottom of a 9x13 baking dish.

In a large bowl, whisk together eggs, milk, minced garlic, chopped shallot, chopped tomatoes, spinach, basil, mozzarella cheese, salt and pepper.

Pour mixture evenly in baking dish.

Bake for 40-45 minutes or until slightly golden.

Let sit for 10 minutes before slicing.

Garnish and season as desired.

Dish makes 6 servings!
