Honey Mustard Lentil Salad

INGREDIENTS

2 tbsp whole grain mustard

2 tbsp lemon juice

1/4 cup olive oil

2 tbsp honey

1/2 tsp sea salt 1/4 cup shallot, thinly sliced

3 cups lentils (cooked)

6 cups baby spinach

1 cup halved cherry tomatoes

1 large carrot, shredded

8 oz chicken, cooked

DIRECTIONS

In a mixing bowl, whisk together the mustard, lemon juice, olive oil, honey, and salt.

Gently toss in the shallots, lentils, spinach, tomatoes and carrot until well incorporated.

Top with grilled chicken.

Divide onto 5 plates and enjoy!

NOTES

Other protein options instead of chicken that go well are shrimp, tofu, beef, or tempeh

Goat cheese goes well on top
