Roasted Veggie Lentil Salad
Ingredients
3 cups lentil (cooked
1 small onion
1 large carrot
1 stalk of celery
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tbsp parsley
1/2 tsp lemon juice
Directions
In a medium pan, heat up olive oil on a low heat. Once the oil is hot, add chopped onions and sauté until golden.
Add the salt, black pepper, and lemon juice. Stir well.
Cook the chopped carrots and celery on a low heat with the lid closed for 5-10 minutes.
Add the cooked lentils and the parsley. Stir well.

A vegetarian salad with a great source of plant protein!
Lentils are also a very good source of Iron.
