Air Fried Chicken Milanese
Ingredients
Air Fried Chicken Cutlets:
2 chicken breasts, halved
1 large egg
1 cup Panko breadcrumbs
1/2 cup whole wheat Italian breadcrumbs
1/4 cup grated Parmesan cheese
1/2 cup flour
2 cloves garlic
minced Salt, pepper
Olive oil spray
Arugula Salad:
8 cups baby arugula
4 tablespoons lemon juice
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tsp dried basil
1 tsp dried oregano
Salt and pepper
Directions
Prepare the chicken by slicing each chicken breast in half, making 4 thin slices. Next, pound the chicken until each slice is even thickness, about 1/2 inch thick. Season each slice with salt and pepper.
Next, whisk the egg in a shallow bowl. In second bowl, combine both types of breadcrumbs, Parmesan cheese, and garlic. Pour the flour in a third bowl.
Bread the chicken slices by dipping the chicken in flour, then egg, then breadcrumb mixture. Place each piece on a baking sheet lined with parchment paper.
Spray the tops of the chicken cutlets with olive oil spray. Air fry at 400 for 10-12 minutes, flipping halfway through.
Next, make the dressing for the arugula salad by whisking together the lemon juice, olive oil, balsamic vinegar, basil oregano, salt, and pepper until emulsified. Mix together arugula and dressing.
Serve chicken cutlets topped with arugula salad and freshly grated Parmesan cheese.
