Stuffed Chicken Breasts
Ingredients
4 chicken breasts
1 tsp lemon juice
3 tbsp olive oil
2 cloves garlic, minced
2/3 cup ricotta cheese, part skim
1/4 cup Parmesan cheese
1/4 cup shredded mozzarella
1 cup spinach, packed
2/3 cup sun dried tomatoes
1/4 cup fresh parsley
1 tsp dried basil
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
Salt and pepper
Directions
Make the filling by combining lemon juice, minced garlic, all 3 cheeses, spinach, sun-dried tomatoes, fresh parsley, basil, oregano, and red pepper flakes.
Pat chicken dry and season with salt and pepper.
Lay chicken flat and cut a pocket in the side of the chicken breasts, making sure not to cut through the other side, top, or bottom of the chicken. Evenly stuff each chicken breast with filling.
In a large skillet, add olive oil over medium heat. Add the chicken ad cook for 5-7 minutes and flip. Cook other side for another 5-7 minutes.
Remove from heat and allow to set for 3-5 minutes before serving.
Notes
Flavorful chicken dish!
Pairs well with rice.
