Air Fried Pesto Salmon

Ingredients

1 lb salmon filet

1 tsp lemon juice

3 tbsp basil pesto

3 tbsp panko breadcrumbs

2 tbsp whole wheat Italian breadcrumbs

1 tablespoon olive oil

Directions

Preheat air fryer (or oven) to 400 degrees F.

Place large salmon filet or cut salon filets on a baking sheet and brush tops with lemon juice, salt, and pepper.

Next, brush tops with pesto.

In a bowl, combine both types of breadcrumbs. Once mixed, sprinkle the salmon filets with breadcrumbs.

Drizzle olive oil over filet(s) and air fry until crispy (6-8 minutes).
