Tuscan Salmon
Ingredients
1 lb salmon filet
1 tsp lemon juice
2/3 cup sun dried tomatoes
2 cups packed baby spinach
1 tbsp olive oil
3 cloves garlic, minced
1/4 cup heavy cream
1/4 cup reduced-sodium chicken broth
1/4 cup grated Parmesan
1/4 tsp crushed red pepper flakes
Salt and pepper to taste
Directions
Heat olive oil in a skillet over medium heat.
While heating, season salmon with salt and pepper.
Once seasoned and the pan is hot, add fish fillets in a single layer, skin side down. Sear for 6-8 minutes, and flip fillet. Cook on the other side for about 2-3 minutes.
Remove salmon and cover with foil.
Reduce heat to medium, and add minced garlic and sundries tomatoes. Sautee for 2 minutes or until fragrant.
Add in chicken broth, heavy cream, lemon juice, and crushed red pepper flakes and bring to simmer for about 5 minutes.
Turn off heat and stir in Parmesan and spinach until wilted and creamy.
Top salmon fillet with sauce and serve.
