Apple Sugar Cookies

Ingredients

¾ cup coconut oil (not melted)

½ cup granulated sugar

¾ cup brown sugar, lightly packed

½ cup unsweetened apple sauce

1 tsp vanilla

1 tsp baking soda

1 tsp salt

2 cups all-purpose baking flour

Directions

If your coconut oil is melted, place into the fridge a few hours before.

Preheat oven to 400 degrees F.

Place coconut oil and sugars into a bowl and mixed well, do not try and melt or the recipe won't work. Also do not use an electric mixer, it'll heat the oil and sugars too much.

Mix by hand.

Mix in the apple sauce (if making the apple sauce from scratch it can still be chunky, will give a delicious final texture).

Add the rest of the ingredients and mix thoroughly.

The dough should turn out to be the thickness of a pie crust.

Bake for 8-12 minutes.

Notes

I will not call these "healthy" cookies because they don't contain butter, they're still full of sugar. I will agree they are better to consume than a store bought cookie because there are no preservatives. Weight management is all about portions. Eat 2 and freeze the rest.
