Avocado Tuna Salad

Ingredients

5 oz tuna (canned and drained)

1/2 avocado

2 tsp olive oil

1/4 red bell pepper

1/4 large onion

1/4 medium cucumber

1 tsp lemon juice

Directions

Chop onions, bell pepper and cucumber.

Cut avocado into small pieces.

Make salad:

In a large bowl, toss together all salad ingredients.

Add 2 tsp olive oil and 1 tsp lemon juice and mix everything together

Notes

A vegetarian salad with a great source of protein!

Quick for lunch or dinner and very refreshing during summer.
