Cottage Cheese Pancakes
Ingredients
1 cup low fat cottage cheese
1/2 cup almond flour
1/2 cup while all-purpose flour
2 large eggs
3/4 cup 2% reduced fat milk
1.5 tbsp maple syrup
3 tbsp butter
Directions
Put all ingredients together in the blender and blend until smooth, add 1 tbsp water at a time until desired thickness is reached.
Preheat a pan on low heat, add 1 tsp of butter and pour 1/4 cup of batter into the pan.
Flip once the first side bubbles, add another tsp of butter to the pan and remove from heat when golden brown.
Careful not to cook on too high of a heat, the cheese takes longer to cook. The pancake will burn if you try and rush the process. Enjoy!
Notes
Top with nut butter, jam, coconut, or fresh fruit!
You can use plant-based milk such as oat milk or coconut milk instead!
