Tofu Scramble

Ingredients

1 tsp olive oil

1/2 cup chopped onion

1 minced garlic

1/2 tsp turmeric 1 tsp cumin

1 tsp salt

1/2 tsp smoked paprika

3.5 oz tofu

1 large chopped tomato

1/4 cup chopped parsley

Directions

Heat a medium size pan over low heat and add 1 tsp olive oil. Once hot, add onions and garlic.

Sauté until fragrant and golden brown.

Then, add the tofu. Mash it until crumbled.

Add your seasonings (1/2 tsp turmeric, 1 tsp cumin, 1 tsp salt, 1/2 tsp paprika) and stir for 5 minutes.

Add your chopped tomatoes and parsley. Remove from heat and serve immediately for a raw tomato feel or let cook for 3 more minutes for the flavors to combine and tomatoes to soften.

Notes

This recipe is packed with plant-based protein.

Try adding milk to make it more creamy.

Can be served as a burrito or on whole wheat bread!
