Egg Salad Sandwich

Ingredients

1 slice bread

4 hard boiled egg whites

1.5 Tbsp avocado mayonnaise

1 stick green onion, thinly sliced

1 stick celery, thinly sliced

Seasoning:

sriracha, dijon mustard, lemon juice, garlic clove, salt, cayenne, black pepper

2 slices of tomato

Few spinach leaves or 1 romaine leaf

Directions

Mix 1/4-1/2 teaspoon of sriracha, fresh lemon juice, and dijon mustard with avocado mayo.

Add 1/2 minced garlic clove.

Mix in a dash of salt, cayenne, and black pepper.

Fold in chopped egg white

Fold in desired crunch amount of celery (1/8 cup is the original recipe).

Fold in 1 tbsp of green onion.

Plate over your greens and sliced tomato over bread.

Can also try 1/2 of a ripe avocado smashed with soft boiled eggs (with yolk), no mayo
