Spicy Egg Salad
Ingredients
4 hard boiled eggs (yoke removed)
1.5 tablespoons avocado oil Mayo
1 teaspoon dijon mustard
1 teaspoon sriracha
Juice from one wedge of lemon
1 stick celery
Directions
Cut up egg whites and celery into small cubes or pieces, put into bowl and set aside
In another bowl mix together the mayo, mustard, sriracha, and lemon juice.
Then add the egg whites and celery into the sauce bowl, mixing well to make sure everything is coated evenly
Notes
Can be a great topping for a slice of whole wheat toast
If you don’t love mayo try mashed avocado instead
