Egg White Stir Fry
Ingredients
5 egg whites, beaten
1 medium carrot, shredded
1 green bell pepper, sliced
1 bunch enoki mushrooms, ends trimmed and cleaned (or your choice of mushroom)
2 cloves garlic, sliced
1.5 tablespoon oil
¼ teaspoon salt
½ tablespoon soy sauce
Directions
Heat 1 teaspoon oil in a nonstick pan over medium heat, add in the garlic, carrot and green pepper, stir fry for 3-5 minutes over medium-high heat or until vegetables are softened.
In a bowl whisk together the egg whites, salt, pepper, and soy sauce until well combined.
Add 1 tablespoon oil into the pan, pour in the egg mixture, mushrooms, green onion, and wait for the egg to set and then break it into small pieces with a spatula, stir fry for another 2-3 minutes or until egg reaches desired consistency.
Serve and top with leftover green onion.
Notes
For more flavor add any vegetables you want, like onion, and use an Asian sauce instead of plain soy sauce.
