Beef and Broccoli

Ingredients

1 lb flank steak, thinly sliced

1 tbsp olive oil

2 cloves garlic, minced

1 shallot, finely chopped

3 stalks green onion, chopped

4 cups broccoli florets

2 tbsp cornstarch

3/4 water

1/3 cup low-sodium soy sauce

2 tbsp honey

1 tsp fresh ginger, minced

1/4 tsp red pepper flakes

1 tbsp sesame seeds

Directions

Slice the flank stead across the grain into 1/4 inch slices.

Preheat a pan over medium-high heat and then add 1 tbsp olive oil or less.

Once hot add meat into the pan and cook until browned, about 6-8 minutes. Remove beef from pan and set aside.

In the same pan, add garlic, shallots, and green onions and sauté for 1 minute. Add broccoli and cover. Let cook for 5 minutes.

In a small bowl, combine water and cornstarch until smooth. In another bowl, combine soy sauce, honey, ginger, and red pepper flakes. Add cornstarch slurry and stir to combine, creating a sauce.

Remove lid and add sauce, cooking for 5 minutes until thickened. Add beed and stir to combine, cooking for another 2 minutes.

Garnish with green onions and sesame seeds before serving.

Notes

Serve over rice to create a satisfying and balanced dinner.

Serves 4. 1/4 total recipe gives about 2 servings protein, 1 1/4 servings fat, and 1/2 servings carbs.
