Lemon Chicken Soup

Ingredients

8 cups low-sodium chicken broth

2 cups shredded chicken breasts

1 cup dry couscous

2 tbsp olive oil

6 cloves of garlic, minced

1/2 cup diced yellow onion

1/2 cup diced carrots

1/2 cup diced celery

1 large lemon, zested

1/4 cup grated Parmesan cheese

1/4 cup chopped chives Salt, pepper, and crushed red pepper

Directions

Place oil in a large pot over medium heat.

Once hot, add in carrots, onion, celery, and garlic. Add to pot and sauté for 4 minutes.

Add chicken both, lemon zest, and crushed red pepper. Raise the heat and simmer for 5 minutes.

Stir in couscous, salt, and pepper and simmer for another 5 minutes.

Add in shredded chicken.

Stir together, and add Parmesan cheese and chopped chives. Add seasoning to taste.

Garnish with sliced lemon and more grated parmesean and serve warm.

Serves 2-4

1/4 total recipe: 0.5 serving vegetables, 1.5 servings protein, 1 serving fat.

A filling and warming lunch or dinner for those cold winter days!
