Salmon, Broccoli, Cauliflower Rice
Ingredients
1 tsp sesame oil
4 oz wild atlantic salmon
2 green onions
1/4 cup soy sauce
3 tbsp rice vinegar
1 stalk broccoli
3 garlic cloves
1 cup riced cauliflower
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
3 tbsp sesame seeds
Directions
Preheat a medium sauce pan on a low heat, add 1 tsp sesame oil. When the oil is hot, cook salmon for 3-5 minutes. Remove from the pan, and set aside to cool.
In the same pan, with any left over fat/oil, add the chopped onions and cook until softened.
Add soy sauce and vinegar to the pan. Stir until the sauce is thickened then add the broccoli and garlic cloves and stir until well coated.
Add the salmon back in and cover. Let cook for 5-8 minutes or until broccoli is tender and salmon is at least 145 F.
Chop/pulse cauliflowers until it resembles rice. Set pan to high heat for 2 minutes. Add 1 tbsp olive oil, 1.2 cup cauliflower rice, 1 tsp salt, and 1/2 tsp pepper. Stir and cook until desired tenderness.
Notes
Cauliflower rice cooks quicker than traditional rice!
Feel free to add any additional fresh herbs to this dish that would compliment the salmon.
