Asian Turkey
Ingredients
1 pound ground turkey
1/4 cup shredded carrots
2 1/2 cups mushrooms (coarsely chopped)
1 can sliced water chestnuts (drained and coarsely chopped)
2 green onions (chopped)
1 clove garlic (minced)
3 tbsp hoisin sauce
2 tbsp low sodium soy sauce
1 tbsp rice wine vinegar
2 tsp red chili paste
12 butter lettuce leaves
Directions
Preheat a pan over medium-high heat, and add the ground turkey.
Cook and crumble until brown.
Add carrots, mushrooms, half of the water chestnuts, the green parts of the green onions, and garlic. Continue to cook for 1-2 minutes until turkey is cooked and veggies are tender.
Add the hoisin sauce, soy sauce, rice wine vinegar, and chili paste.
Stir and let simmer for 1-2 minutes, or until sauce thickens.
Serve on butter lettuce leaves. Garnish with the whites of the green onion and rest of the water chestnuts.
Notes
This can be served over lettuce leaves, in a sandwich, over rice, with pasta, or by itself with a vegetable dish on the side.
