Sunny Side Breakfast Plate

Ingredients

1/2 avocado, sliced

2 eggs

1/2 tbsp olive oil

1 slice of whole grain toast

7 cherry tomatoes

Directions

Crack 2 eggs in own individual bowls, avoiding breaking the yolk.

Heat a non-stick pan with oil over medium heat.

Slowly pour in eggs and cover.

Cook on low for 2 minutes or until whites are set.

While cooking, toast a slice of bread, slice 1/2 avocado, and rinse 1/2 cup berries of choice.

Serve eggs on plate with toast (butter optional), sliced avocado, and cherry tomatoes.

A great recipe to enjoy for a balanced and satisfying breakfast.
