Spinach and Mushroom Frittata

Ingredients

8 eggs

1/4 cup milk of choice

2 tsp minced garlic

1 tbsp olive oil

1 shallot, chopped

1.75 cup mixed mushrooms, chopped

1 cup baby spinach

1/4 cup crumbed feta

Directions

Preheat oven to 400 degrees F.

Whist together eggs, milk, minced garlic, and salt and pepper.

Heat 1 tbsp olive oil in a 12 inch cast iron skillet over medium heat.

Add chopped shallots, spinach, and mushrooms until wilted and softened.

Add in egg mixture and evenly distribute in pan. Sprinkle feta on top and bake for 15-20 minutes.

Makes 2-3 servings per pan. Freeze or share the rest!

Notes

A great breakfast that feels like it was served from a restaurant!

Serve with a slice of whole grain toast for a more filling breakfast.
