Turkey Meatballs for Tomato Pasta

Ingredients

1 tsp olive oil

3 cups sliced mushrooms

1 egg, lightly beaten

1/3 cup rolled oats

1/3 cup grated parmesan cheese

3 cloves garlic, minced

2 tsp Italian seasoning

1/2 tsp salt

1/4 tsp ground pepper

1 1/4 lb lean ground turkey

1 box pasts with fresh tomato sauce

Directions

Preheat oven to 400 degrees and preheat oil in a pan over medium heat

Add mushrooms and cook until brown

Combine egg, oats, parmesan, garlic, italian seasoning, salt, and pepper in a bowl.

Chop mushrooms to smaller pieces if desired.

Add mushrooms and turkey into the bowl, mix well.

Pat meat texture mixture into a rectangle on a cutting board to easily cut into 30 squares, roll into individual balls.

Place the balls 1/2 inch apart on a baking pan (spray lightly with oil).

Bake until internal temperature is 165 degrees and they’re no longer pink in the center (12-15 minutes).

Serve 4-5 meatballs with each serving of pasta and tomato sauce.
