Arugula Avocado Tomato Salad

Ingredients

5 ounces arugula

6 leafs fresh basil

24 ounces of tomatoes

2 avocados

1/2 cup onion of choice

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 ounce lemon juice

1 clove of garlic

Directions

Chop up basil, tomato, onion, and avocado into small cubes (mashing avocado is also an option)

Crush garlic and mix with the balsamic vinegar, olive oil, and lemon as the dressing

Wash and put arugula into bowl, adding in the chopped veggies as well. Mix to combine

Add dressing and toss salad until well coated

Serve and enjoy!

Can be served on its own or as a side
