Jo’s Simple Chili

Ingredients

1 lb ground beef - 80% lean for fatty flavor

1 large white onion

1 head of broccoli

3 cups of sliced mushrooms

1 can whole peeled or crushed tomatoes (personal texture preference)

1 can pinto beans (15oz can)

1 can black beans (15oz can)

1 can kidney beans (15oz can)

1 lb campari tomatoes (about 9)

3 tbsps chili seasoning of choice

Directions

Heat a large skillet over medium heat and then add the ground beef, no need to add oil to the pan since the fat in the meat will prevent it from sticking after a few minutes

While the meat browns, slice the onion, mushrooms and broccoli.

Add them to the pan, stirring occasionally to ensure even cooking

Heat a large pot over medium heat.

Once hot add the whole peeled tomatoes and three cans of beans.

No need to drain the beans, the liquid has great nutrients!

Once the ground beef is evenly brown and the vegetables have softened, add them to the pot of tomatoes and beans.

Add chili seasoning and let simmer for 10 minutes.

Chop the fresh tomatoes and add at the end to have the fresh tomato chunks.

Let simmer for 10-15 minutes for less chunks of raw tomatoes.

Notes

Use your choice of protein, it doesn’t have to be beef

Pairs well with more veggies ;)
