Creamy Mushroom Pork Chops
Ingredients
Four 3 oz boneless pork chops
¾ tsp salt, or to taste
¼ tsp black pepper, or to taste
½ tsp paprika, or to taste
1 tbsp unsalted butter, divided
2 tsp olive oil
8 oz mushrooms or more, sliced
½ medium onion, finely chopped
2 garlic cloves, minced
1 tbsp flour
1 tsp hot sauce of choice
1 cup chicken broth
1/3 cup whole milk
1 tbsp parsley, optional garnish
Directions
Season pork chops with salt, pepper, and paprika.
Heat 2 tsp oil in a large pan over med/high heat.
Once hot sear chops with lid on (3-4 min) per side until golden brown. Remove from heat.
In the same pan add 1 tbsp butter, sliced mushrooms, and onions. Lightly season with salt and pepper, cook until tender.
Add minced garlic and sauté for 30 seconds, stirring frequently.
Add flour and stir vigorously for 30 seconds.
Add broth, hot sauce, milk and season with salt and pepper to taste.
Cook on medium for 2 minutes or until sauce reduces and thickens, stirring occasionally.
Add pork chops back and cover 5-8 min. Reduce heat to low and simmer to allow the pork chops to become tender and the flavors to incorporate.
Remove from heat, garnish, serve with vegetables and enjoy!
Notes
I would pair this one with asparagus or broccoli. You could even add the serving of broccoli/chopped asparagus into the mix with the mushrooms to make it more full of vegetables. If you want the vegetables with more of a crunch then cook separately or add right at the end with the pork.
