Avocado Egg Salad

Ingredients

1 avocado, cubed

4 hard boiled eggs, sliced

1 small cucumber, sliced and halved

1 medium carrot, shredded

1/4 large bell pepper, diced

1 tbsp balsamic vinegar

Directions

Add all ingredients to a bowl and toss (all vegetable amounts can be changed depending on preference, the calories come from the eggs and avocado)

Prior to serving, drizzle the balsamic vinegar over the salad to extra flavor

Notes

This is an extremely filling salad if you like the taste of raw vegetables

If you prefer them less crunchy then sauté them for 5 minutes before adding in the egg and avocado.
