Black Bean Bowl

Ingredients

2/3 cup black beans (canned or precooked)

1/2 cup corn

1/4 cup chopped bell pepper

1/4 cup chopped sweet onion

1/2 avocado (optional)

1/2 cup chopped green onion

1/4 cup parsley

Dressing:

2 tbsp vinegar

1 tsp lime

1 tsp black pepper

1 tsp oregano

1 tbsp olive oil

Directions

In a bowl, add your chopped onions, bell peppers, corn, and black beans.

Mix them together. Mix dressing separately then add to bean salad and mix well.

Add parsley and avocado on top for extra flavor and garnish.

Enjoy!

Notes

Season your bowl with a little chili powder and cumin!

Feel free to add any additional fresh herbs to this dish.

You may make your own dressing!
