Chickpea Bowl

Ingredients

1 cup chickpeas (canned and drained)

1 medium sliced cucumber

1/2 cup chopped bell peppers

1/2 cup diced red onion

2 cups baby spinach & spring mix blend

1 cup chopped broccoli

Dressing:

2 tbsp olive oil

1 tsp salt

1 tsp oregano

1/2 tsp black pepper

1 tsp lime

1 tbsp vinegar

Directions

In a bowl, combine all vegetables (chopped bell peppers, diced onions, spinach and spring mix blend, sliced cucumber, and chopped broccoli) as well as 1 cup of drained chickpeas.

Mix the dressing separately, add to the salad, and mix well.

Notes

Onions are antioxidant-rich. broccoli has tons of health benefits.

Throw in some chickpeas for protein and flavor and you’ve got the perfect healthy lunch!
