Chinese Cucumber Salad
Ingredients
Chili Oil
1/2 cup olive oil
1" piece ginger, minced
3 garlic cloves, minced
3 tbsp ground chilis
1 tsp black pepper
1 tsp coriander seed powder
1/4 tsp lemon zest
1 tbsp sesame seeds
1/4 tsp salt
Cucumbers
6 Persian cucumbers
3 garlic cloves, grated
2 tbsp chili oil
1 tbsp toasted sesame oil
salt to taste
Directions
Heat oil on high for 1-2 minutes
In a medium heatproof bowl whisk, combine all other chili oil ingredients.
Slowly pour the oil over the spices, whisking to fully incorporate them. Set aside to cool.
Cut the cucumbers into 1 inch pieces, then halve.
Combine the cucumbers with the chili oil, sesame oil, and season with salt to taste.
Notes
Lots of healthy fats in this recipe. It'll be a great one to incorporate on a day that is full of grains and a protein shake but missing essential fatty acids.
Can make it a less fatty dish by adding more cucumber!
