Mashed Potatoes

Ingredients

9 medium potatoes, about 3.5 lbs

1 cup whipping cream

1/4 cup of unsalted butter

3 tbsp of chopped peeled garlic cloves

1 tbsp of salt

1 tbsp cilantro (optional garnish)

Directions

Cut the potatoes into quarters, place in a large pot and cover with water.

Add 1/2 tablespoon of salt and bring to a boil, then simmer for 20 minutes or until softened.

Chop the garlic and place in a small pot on medium heat.

Add the butter and cream then bring to a boil. Remove from heat and set aside until the potatoes are done.

Drain the potatoes, add the cream mixture, and mash until well combined. Salt to taste and enjoy!

Notes

A simple and traditional mashed potato recipe.

Dishes cooked with fat and are starch based do not need to be eliminated from the diet. Enjoy them!

The best way to manage your weight is sticking to 1 serving or less.
