PB&J Overnight Oats

Ingredients

1/2 cup rolled oats

2/3 cup milk of choice

1/2 cup non-fat greek yogurt

2 tsp pure maple syrup

1/2 tsp vanilla

1/2 tbsp chia seeds

1/2 tbsp lemon juice

1/2 cup raspberries

1 tbsp peanut butter

Directions

Combine rolled oats, milk, yogurt, maple syrup, and vanilla in a bowl or jar that can be sealed tight.

Stir well to combine.

Seal jar and refrigerate over night or for 4+ hours.

In a separate bowl, create raspberry jam by mashing raspberries.

Add lemon juice and chia seeds and stir to combine.

Serve overnight oats warm or cold. Top with raspberry chia jam and peanut butter.

Notes

Get as creative as you want, top with extra chopped fruit, peanuts, etc.

Overnight oats are also delicious with pre-cooked steel cut oats, cook for 10 minutes before adding the other ingredients and putting into the fridge overnight.
