Protein Muffins

Ingredients

2 large overripe bananas

1 cup creamy peanut butter

2 eggs

1/4 cup honey or maple syrup

4 tbsp protein powder of choice

1 cup almond flour

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

Directions

Preheat oven to 400 degrees F.

Place all ingredients except the chocolate chips in a bowl and mash with a fork until smooth, I prefer to have mine with small chunks of banana.

Using a spatula or spoon lightly stir in the chocolate chips. Spray a standard muffin tin with olive oil spray and scoop batter into the muffin tin (I use 2 overflowing tablespoons per muffin)

Bake 12-14 minutes or until a toothpick stuck in the middle comes out clean.

Notes

Serve with eggs in the morning or enjoy as a midnight snack when cravings are high. Top with more peanut butter for extra nutrition and to make it more filling.
