Roasted Cauliflower
Ingredients
4-5 cups chopped cauliflower
3 tsp olive oil
2 garlic cloves, minced
1/3 cup nonfat greek yogurt
1 oz lemon juice
1 tbsp tahini
1 tsp salt
1/2 tsp black pepper
1/2 cup grated parmesan cheese
Directions
Preheat oven to 400 °F.
Add all ingredients, except the cheese, to a gallon freezer bag and shake until well mixed. This is my hack for using less oil and evenly seasoning them.
Evenly spread cauliflower across a baking sheet and place under the broiler for 10-15 minutes, taking out to flip and move them around every 2-3 minutes.
Once cooked to your likely sprinkle with the cheese and put back in the oven for 2-3 more minutes.
Let cool and enjoy!
