Spaghetti Squash Stir Fry

Ingredients

1 baked spaghetti squash

2lbs ground beef

1 yellow onion

1 red bell pepper

1 cup sliced carrots

2 cups mushrooms

1 cup shredded mozzarella cheese

Salt and pepper to taste

Italian seasoning to taste

Directions

Bake spaghetti squash and set aside.

Add ground beef to a large pan on medium heat, stir occasionally to cook evenly.

Once ground beef is browned add diced onion and sliced carrots.

Once carrots and onion are softened add sliced bell pepper, sliced mushrooms, salt, pepper, and Italian seasoning to taste.

Once peppers and mushrooms are softened, add spaghetti squash and cheese.

Mix until well combined.

Notes

Other protein options instead of beef that go well are shrimp, tofu, chicken, or turkey
