Tuscan Shrimp Pasta
Ingredients
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/2 cups heavy cream
1/2 tsp grated lemon zest
2 tsp olive oil
6 ounces shrimp, peeled and deveined
1/4 cup sun-dried tomatoes
1/2 cup spinach, packed
4 ounces pasta, whole wheat
1 tbsp chopped fresh basil
Directions
Combine cream and garlic in a medium saucepan.
Bring to a simmer over medium heat and cook, stirring occasionally, until reduced, about 10 minutes.
Stir in Parmesan, sun-dried tomatoes, and lemon zest.
Cover to keep warm.
Meanwhile, cook pasta according to package directions.
Drain, reserving 1/2 cup cooking water. Heat oil in a large nonstick skillet over medium-high heat.
Add shrimp and cook, stirring often, until pink, about 3 minutes.
Add the sauce, pasta; toss to coat.
Add the reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.
Finally, add in spinach until wilted
Divide among 4 bowls and sprinkle with basil.
